I've seen them a handful of times and listened to a few other shows and I'd say they're pretty faithful though certainly not exact. I've certainly never seen them/heard them recreate the actual banter from the show or a Yellow Dog Story or anything like that.

That said I think they definitely make an effort to have the highlights in their show be the same as they are in the original, they definitely give something some extra oomph if it happens to have been a particularly good original.
Also if there are certain distinct characteristics about a song they give a faithful attempt to recreate them. Example off the top of my head the show closing Truckin' from 77/11/06 has a totally unique solo from Jerry in it and in DSO's version they definitely try to replicate it:

I've never seen them do a pre-retirement show though, it would be interesting to see how faithfully they recreated a BIG jam like Dark Star or TOO from a particular date.
